Rick Stein Makes Sicilian Pasta

Using aubergine, garlic, chopped tomatoes, feta, basil and spaghetti chef Rick Stein makes a Pasta Norma. Great vegetarian pasta dish from BBC cookery show Rick Stein’s Mediterranean Escape.




1/2 packet of  angel hair pasta

Olive oil

4- cloves garlic, peeled, crushed and roughly chopped

4-5 diced tomotes san marzanos

1 eggplant obersiean

Sea salt and cracked pepper

Feta Cheese

1/2 cup flat-leaf parsley, roughly chopped


To Serve

Shaved pecorino


Slice the eggplant and salt-let sit for at least 20 min. drain the mosture thru a towel.

Heat olive oil and fry the eggplant sear and set aside

You will need a pot big enough for boiling your spaghetti, and a frying pan to make the sauce.

  1. While waiting for a pot of salted water to boil (for spaghetti),
  2. Chop the garlic and fry in olive oil
  3. Add chili flakes
  4. Add the chopped tomotes
  5. Add the eggplant
  6. Season with S and P
  7. Add the Feta cheese
  8. Add the fresh Basil and Pasta
  9. Garnish with Feta
