Using aubergine, garlic, chopped tomatoes, feta, basil and spaghetti chef Rick Stein makes a Pasta Norma. Great vegetarian pasta dish from BBC cookery show Rick Stein’s Mediterranean Escape.
1/2 packet of angel hair pasta
4- cloves garlic, peeled, crushed and roughly chopped
4-5 diced tomotes san marzanos
1 eggplant obersiean
Sea salt and cracked pepper
1/2 cup flat-leaf parsley, roughly chopped
Slice the eggplant and salt-let sit for at least 20 min. drain the mosture thru a towel.
Heat olive oil and fry the eggplant sear and set aside
You will need a pot big enough for boiling your spaghetti, and a frying pan to make the sauce.
- While waiting for a pot of salted water to boil (for spaghetti),
- Chop the garlic and fry in olive oil
- Add chili flakes
- Add the chopped tomotes
- Add the eggplant
- Season with S and P
- Add the Feta cheese
- Add the fresh Basil and Pasta
- Garnish with Feta
