Holly’s Sweet Balsamic Onion Jam of Love Recipe
ONION JAM PREPARATION AND COOKING TIME
1 pot or Dutch oven, a cutting board, and a sharp knife.
This recipe works with frozen onions too!
Depending on your cooking journey, the cooking time may vary. The final cook time my be 1 hour.
ONION JAM | RECIPE TIPS
You can substitute fresh onions with frozen ones in this recipe, as well as mix firmer with more ripe onions. Everything will saute and simmer down just the same.
The type of chop you choose is up to you. I prefer a medium dice, but you can also opt for long thin slices.
Choose natural sweeteners like maple syrup or honey. Brown sugar instead of white sugar to give you a much more complex taste.
TIP #23 measure all the ingredients before beginning your cooking.
Ingredients
2 tablespoons of olive oil
2 pounds of mixed sweet and yellow onion and red. (about 6-7 cups) It looks like a lot…but the onions will cook down.
6-7 cloves of thinly sliced garlic (less if you’re not fully committed to a moderate garlic taste)
1/2 cup dry red wine
2-3 Tablespoon of a good quality balsamic vinegar
1 cup brown sugar
½ cup of honey
Salt and Pepper to taste
Instructions
Peel and small dice (or thinly slice) the onions. OR BOTH.
Add the olive oil to a Dutch oven or heavy-bottomed pot over medium heat. Add the onions and garlic. Cook covered for 20-30 min.
Remove the lid and add the red wine, balsamic vinegar, brown sugar, and honey.
Cover and cook for another 45-60 minutes over low/med heat, stirring occasionally. You want the onions caramelized, dark golden color, soft and the majority of the liquid evaporated. Season with salt and pepper.
