The Simplest Pickled Red Onion Recipe On The Planet

This is am amazing way to add cucumbers!


So How Do You Pickle Red Onions?

Making pickled red onions is easy—it takes just 10 minutes and you likely have all the ingredients! They'll be great to have in your fridge for tacos, avocado toa?st, and what about pickled cucumbers.

The Ingredients 

  • 1 red onion, as thinly sliced as possible (use a mandoline if you have one)

  • 1/2 cup apple cider vinegar, white wine or plain vinegar

  • 1-2 tablespoon, Splenda, Stevia, granulated sugar or Agavi

  • 1 teaspoon chopper garlic

  • 1 teaspoon peppercorns (optional)

  • 1 teaspoon for dried or fresh parsley (optional)

  • 1 teaspoons salt

  • 1 cup hot water 130 degrees (not boiling)

    After 2 days in the fridge, I slice the peeled cucumber again….VERY THIN and add it to the onion mixture. Over night is when the Magic happens!

  • Fresh Long English Cucumber, peeled or unpeeled.

Instructions 

  • Slice the red onions as thin as you can. Use a Mandoline or cusianart style electric grader or a sharp knife works well, too.

  • place all the red onions in the jar of your choice. A bowl works too.

  • In a measuring cup, combine vinegar, salt, sugar, and warm water. Stir to dissolve the sugar and salt. Pour the pickling mixture over the sliced onions, making sure they are immersed in the liquid, and let them set for an hour.

  • After an hour, cover and store in the fridge for up to three weeks.

Make These Onions Your Own!

Substitute other onions for red onions. Use maple syrup or honey instead of granulated sugar. For sweeter pickled onions, add more sweetener; for tangier, use less. You can also use white distilled, rice, or white wine vinegar instead of apple cider vinegar, or mix them.

Recipe can be doubled; ensure you have enough clean jars with lids. Sliced onions should be fully submerged in the vinegar solution.
You can change this recipe in many ways. Use a different onion or cut it thicker.

Cut the onion into rings, half moons, or chop it roughly.

Swap in a different vinegar or sweetener. Adjust the sweetness of the onions.

Add red pepper flakes for spice. Sliced garlic brings strong flavor. You can also add whole spices (like peppercorns, fennel seeds, cumin seeds, mustard seed), a bay leaf, or fresh herbs.

You will want to double or halve the recipe. It’s simple to customize!
